Two-Ingredient Banana Oatmeal Cookies by Ambitious Kitchen (YUM!)

As I was mustering up the courage to prepare a another, new healthy snack recipe, I was busy chiseling a high protein disaster from yesterday that was stuck to the bottom and sides of the pan and my mother was gumming on a square from the dreaded tray of treats. She expressed that that flavor was good, but the treat had texture issues. This sentiment was echoed by my brother and my father (who isn't necessarily a big fan of high protein treats) and me. So,this being my third failed attempt in approximately 24 hours, I had lost my confidence in my ability to create something relatively healthy and tasty; needless to say, I was more than a little apprehensive to try Banana Oatmeal cookies. Part of my doubt was due to a failed attempt in 2016. The cookies I created back then were flat out inedible. Nary a cookie from the batch to be salvaged. So I wasn't sure this new recipe would be any different. Earlier today, I researched healthy snack recipes online because I am a bit nervous about beginning 21 Day Fix EXTREME. There aren't supposed to be any cheats. Yikes. I want to plan ahead and know what on program cheats I can stack my arsenal with, hence trying different recipes. In my searching today, I stumbled on to Ambitious Kitchen , where every single recipe that I came across looked amazing. This gave me a bit of a boost as whipped up Monique's "2-Ingredient Healthy Banana Bread Breakfast Cookies" tonight and shared with my family; these cookies are awesome! My entire family loved them. My creations do look crunchier and weirder than hers, but they still tasted good. Obviously, I didn't ground my oatmeal like she did and mine wasn't gluten free. I also added 1/2 cup chocolate chips to the mix. I am super excited to have found some on program "cheats" that do not taste like cheats while I do my best to focus for the next three weeks on program. Not only will I try other recipes on Ambitious Kitchen, I also plan to use two other sites to keep me on track as well. One has random high protein sweet treats, BodyBuilding.com. The other has lots of food ideas, BlessThisMessPlease.com , though I am mostly excited about the beaucoup of granola recipes that can be accessed easily here: BlessThisMessPlease-Granola.

Wish me luck as I begin this journey. I will be documenting my struggles and successes along the way.
