New Year's Day French Toast

Happy New Year!

Last night was a nice quiet time at home, reviewing my wishes from 2017, reflecting on 2018 and writing my hopes for 2019. I learned 10 years ago that if I called them "resolutions", I wasn't as effective as achieving them. If I just put them in the form of "what I'd like to see happen" or "what I'm interested in pursuing" or "changes I would like to make", I had a better chance one or two of them would stick. Reviewing 2018's hopes, I hit 7 of them out of the part and two or three were sort of done. Not bad results.


I woke up today and meditated for 20 minutes. I love the feeling of my shoulders stretching. I always think that I've returned "home" when I've returned to the cushion. I went back to sleep (with coffee by my bedside, in the spirit of my grandmother Nan).


When I woke, I made french toast, a lighter version. It's no different from regular french toast, other than the use of "light, 45 calorie bread" and measuring the powdered sugar and syrup. I use 1 tsp powder sugar to garnish and use no more than 2 table spoons of regular syrup. I'm not a fan of "lite" or sugar free/fat free varieties of most foods. I prefer to just eat less of the real thing. How the points break down: zero for the eggs. Roughly 1 point per slice of low calorie bread (though for 4 slices, it was 5 points). 1 point for 1 tsp of powdered sugar. 2 points for 1 TBSP of regular syrup. What is pictured here is 8 points (and delightfully delicious).
