Favorite Egg Recipe

Since re-starting WW (better known as Weight Watcher's), I have spent more time cooking breakfast for myself. The Freestyle program is one that works well for me, as I had some success with the 21-Day Fix food program. The fact that fruits, eggs, skinless chicken, tuna fish, a lot of beans that I enjoy, and veg is all free is very appealing to me.


In one of the assorted reading materials that came with the freestyle program, I happened upon a recipe for "Ham and Eggs Omelet".


I am far too lazy to find the original to post here. However, I am sure a bit of sleuthing on a WW site page, perusing recipes might allow the curious reader to find it.


Since the first day back on WW, this has been my very fulfilling and yummy breakfast.

Here is my take on that recipe.


Not So Fat NOR Angry Ham and Eggs For One

Ingredients:

1 green onion

2 slices of tavern ham (use whatever kind you like)

a pinch of Italian blend shredded cheese

1 whole, large egg

3 egg whites (though I have been using 4 full, whole eggs lately---as it is still zero points)

1 TBSP Brummel and Brown Buttery Spread (which my Publix no longer carries...BUMMER)

Salt and pepper to taste


Directions:

I like to prep the onion and ham the night before, chopping them into small bits. First, I heat 1/2 TBSP of butter in a skillet that is on high. I lower the heat some (med/high) when the butter begins to sizzle and after it melts. I add the ham and onion. I like to get the ham a little brown. A chef would whisk the eggs in a bowl at this time and add the salt/pepper here. As I am not chef, I just crack the eggs/egg whites right into the pan and start scrambling with the spatula. I then salt and pepper to taste (as I am scrambling...yeah. It's a bit chaotic in the kitchen). the final part of cooking is sprinkling cheese into the mix and letting it melt. Usually I do this after I turn off the stove and prepare the plate or container I will use to hold my food. I give Sheena, the punk rock, calico cat a taste and place the rest on a plate. Unfortunately, far too often I am rushing out the door and cramming the food down my gullet as I drive to work (breaking a Geneen Roth Eating Guideline), I and I also enjoy fruit and coffee to make it a meal, even if on the go.
